Robust
When all is said and done difficult to season and when done a ninja frying pan worksuch better,a shame really as it could be a good addition but sadly not for me.

Does not compare with carbon steel
This was a gift from a friend who knows I am passionate about cooking. I alwasy take out my carbon steel pans for all types of "pancakes" - from classic pancakes to rotis and dosas and much more. The performance of carbon steel is incredible for this purpose. It "holds" without "sticking" and achieves consistent browning. Carbon steel also spreads heat better so I can use a much larger pan on a smaller flame. Carbon steel, being thinner with faster heat movement from bottom to surface, also responds instantly to reduction or increase in flame, something that is not possible to achieve with this pan. Most importanty, carbon steel is ALWAYS non-stick for pancakes. On that count this pan is not bad at all but it does not "release" a dosa like carbon steel does.Overall, I think this a waste of money for making pancakes when you can get lighter, equally durable cookware in wrought iron or carbon steel - which is made in Germany or France, both equally good.I won't promote brands and will leave for you to find them out.
